Significant weight loss after switching to low-carbohydrate bread
If overweight people, who are used to eating bread, switch to low-carbohydrate bread, they lose almost 2 kilos in three months. The slimming effect of low-carb bread is even greater among people over 55.
Study
Half of the subjects ate regular bread - milled rye bread, to be precise. This was the control group.
The other half of the subjects received low-carbohydrate bread. The low-carb bread was made from "oat flakes, sunflower seeds, flax seeds, chia seeds, psyllium husks, chopped almonds, baker's honey, and Rhinish field beans".
Results
After the subjects in the experimental group had left their regular bread for 3 months and replaced it with low-carbohydrate bread, they had lost 1.8 kilos. The body weight of the subjects in the control group had hardly changed.
The slimming effect of low-carbohydrate bread was greater the older the subjects were. The subjects who were older than 55 even lost an average of 2.6 kilos.
Conclusion
"To the best of our knowledge, this is the first triple-blind randomised controlled trial comparing two different bread types, with contrasting insulin-releasing effects, for an influence on weight development over 3 months, in a study population used to daily consumption of bread. Whether the effects of exchanging the bread type for body weight reduction additionally impact insulin sensitivity or can be extended to other common dietary components with insulin-stimulating properties requires further study."
