Study
American food scientists gave 37 test subjects, all of whom were in the early stages of type 2 diabetes, a dish containing 100 grams of mushrooms every day for 16 weeks.

There was no control group.

Just before and just after these 16 weeks, the researchers analyzed the blood of the test subjects. A month later, the researchers did it again.

Results
After they had eaten mushrooms for 16 weeks, the subjects' blood contained considerably more of the longevity compound ergothioneine. In addition, the blood's ability to neutralize potentially damaging free oxygen radicals was increased [ORAC].

The addition of the mushrooms to the diet also resulted in an increase in the 'good fat cell hormone' adiponectin. Adiponectin allows cells to absorb more glucose and inhibits inflammation.

These shifts may explain why the concentrations of carboxymethyllysine [CML] and methylglyoxal [MG] in the subjects' blood had decreased. Both substances are AGEs. AGEs are formed when glucose reacts with proteins. AGEs can damage all kinds of tissues and accelerate aging.

"Overall these preliminary findings from the addition of one serving of mushrooms to a variety of different dietary intake patterns suggest potential anti-inflammatory and antioxidant health benefits that can occur with frequent consumption over time in adults predisposed to type-2 diabetes", write the researchers.

"Well-controlled studies are needed to confirm these findings and identify the specific mushroom components beneficial to health."
