Nothing wrong with berries from the freezer section

Yesterday we wrote that blueberries from the freezer section are just as healthy as the usually expensive blueberries from the fresh section. According to a Polish study sent to us by a thoughtful reader, this is probably true for all types of berries.

Study
Polish chemists at the University of Science and Technology in Bydgoszcz measured the concentration of anthocyanins and vitamin C in chokeberry, black elderberry, blueberry, blackberry and raspberry berries. This was done on fresh berries that the researchers had recently bought, as well as on berries that the researchers had frozen and then stored for 2 months.

Results
Chokeberries were the best source of anthocyanins, followed closely by elderberries. We're not telling readers of this web magazine anything new here. Freezing reduced the concentration of anthocyanins and vitamin C by 10 and 14 percent, respectively. That's not much.

Drying was not, in terms of the amount of anthocyanins and vitamin C, an effective method of preserving berries.

The researchers also looked at the effect of lyophilization. In doing so, they achieved about the same results as with ordinary drying [air drying].

The table below shows what percentage of the anthocyanins and vitamin C in berries is lost through drying, freezing and lyophilization.

The Poles did not study the effect of drying, freezing and freeze-drying on antioxidant activity.
