Carrots are healthier if you don't peel them

Carrots contain different groups of phytochemicals that have a positive effect on health, the most important of which is perhaps the group of polyacetylenes. When you peel carrots, you throw out half of those polyacetylenes, Danish researchers reported in 2008.

Study
Polyacetylenes make cells more sensitive to insulin and protect against cancer.

A group of Danish scientists, who by the way generated the bulk of our knowledge about polyacetylenes, peeled carrots and then determined the concentration of polyacetylenes in the skins and peeled vegetables.

Results
The peels contained about ten times more falcarindiol than the peeled roots. Falcarindiol is the main polyacetylene in roots.

Based on what we know about the amount of product you lose by peeling carrots, we estimate that by peeling carrots you lose about half the amount of falcarindiol.

Apples protect better against cancer if you don't peel them
Apples are healthier if you eat them with skin. That is, if we are talking about red apples, such as Jonagold and Pink Lady.

Cold brewed white tea contains most antioxidants
In Taiwan it's all the rage, and it's catching on elsewhere too: making tea by steeping leaves in cold water.

Carrots and spinach cooked healthier than raw
Raw vegetables are healthier than cooked ones, some dieticians still claim. The outcomes of epidemiological research are not in line with that dogma, nor are the results of clinical studies.
